KIOSK OPERATOR
Al fresco dining is embedded in the Italian culture and lifestyle. In Italy spending time outside at a restaurant or bar, having a coffee or even an entire meal is a routine pleasure, especially in the mild climate of the south. From Amalfi to Positano, to the world renowned piazzetta in Capri you will find tables, chairs and umbrellas lined up to offer locals and tourists the comfort of a welcoming and cheering atmosphere.
The Kiosk is the Royal Exhibition Building’s equipped area for the preparation and delivery of hot meals during the event. The area is located on the left-hand-side of the Northern Transept entrance and includes a fully equipped commercial kitchen and cool room. Kiosk operator will be able to sell food to visitors thought the day and will serve an Italian piazza located in front of the Kiosk to accommodate approx. 40 people seated.
An entertainment stage on which live music and other attractions will take place during the day will be placed nearby the piazza to provide extra entertainment to the public

Cost: from $1,500 each
1. Bar (beer, soft drinks and Italian cocktails - NO WINE)

Operators will share the Kiosk space and equipment preparing and selling food.
Equipment available includes: deep frier, gas burners, refrigeration and more (ask for more details)
All sales income will be kept by the Kiosk operators.
Coffee operator will bring his own equipment with a reduction on cost of 20%
Kiosk operators will be responsible to provide all extra equipment (ex. pizza oven) they need in order to prepare their dishes
PERMIT AND LICENCE
Temporary Limited Liquor Licence
In order to comply with Victorian Commission for Gambling and Liquor Regulation requirements, exhibitors selling alcohol MUST obtain a Temporary Limited Liquor Licence.
RSA Certificate
All personnel serving wines on site MUST hold a current RSA (Responsible Service of Alcohol) Certificate.
Streatrader regisatration
Participants serving food and drinks must be registered with Streatrader to operate a Temporary Food Premises. If not already registered, you can do so online at https://streatrader.health.vic.gov.au. You will also need to complete and submit a Statement of Trade online at least 5 days prior to the event. Please see the Streatrader website above for instructions.
Cooking & Lifestyle Demostration
Gusto Italiano is not just a Food and Wine festival. Fashion, design, sport and tourism will complete the representation of the most desired of lifestyles - the Italian style.
A program of demonstration activities will take place in different areas of the Royal Exhibition Building giving to the public the feeling of an ongoing, live dynamic experience. Walking through the Royal Exhibition Building will be a continuous discovery of new things, no area will look the same as every corner will host different activities that will change the atmosphere.

3. Fashion parade - 2 rounds of 15 mins fashion parade including 4 models - 2 garments each for every round - hair and make up
